Mouflon, the ancient word for 'sheep'. We want a meat animal, which is a 2nd cross lamb. Technically this is a long story, so to keep it brief, the product is cross bred (good skeletal breed), here it's merino and mated with say a Suffolk (good muscle definition/lighter flavor). Why, because we want a succulent tender lamb product. An experience to be enjoyed n shared by all.
