Winner of the 2017 title of “Grand Champion Wagyu Brand” at the Australian Wagyu Association Branded Beef competition against a field of 19 other Wagyu brands, judges described Tajima Wagyu as
“Extremely tender, yet still firm to the palate, juicy, silky, enduring flavour”
Tajima is the most famous of all the Wagyu bloodlines originating from the Hyogo prefecture in Japan. They are generally smaller framed with slower growth rates ,but produce excellent meat eating quality with a large eye muscle and superior marbling.
Tajima has Australia’s leading Wagyu sires as its foundation. Dedicated producers hail from the east coast of Australia, raising prime cattle on the productive pastures of the New England region in the state of New South Wales, right down to the Gippsland in the state of Victoria. Grown on local farms, our cattle are fed three different specialised rations. Wheat, barley and oats are the basis of the ration specially formulated by nutritionists that guarantees our animals are receiving optimal amounts of protein, energy, vitamins and minerals for their stage of growth and development.
At all stages of the production chain , cattle are managed in accordance with strict quality assurance protocols. All cattle are hormone free , antibiotic free and all Tajima Wagyu beef is produced under the Japanese Food Safety program , JASS, providing full tracebility.
